This French Onion Soup was SO delicious! With the caramelized onions and the rich flavors, it is a new favorite in our household. My husband keeps asking me every week to make it again! We love it!
The total time for this French Onion Soup, including preparation was around 1 hour. I included about 20-30 minutes for prepping time (it took me forever to cut up those onions) and about 25-30 minutes cooking time.
Ingredients for French Onion Soup
about 6 tbsp. of butter
4-5 large onions – sliced about 1/8″ thick
1/2 tsp. of baking soda
Kosher salt & black pepper
2 quarts (2L’s) chicken stock
3 sprigs thyme
8 sliced of rustic bread
1 sliced garlic clove
1 lb Gruyere cheese
Directions
1 – Press sauté on your Instant Pot. When the dsiplay says “hot” put butter into cooker & melt butter.
2 – Add your sliced onions and baking soda & stir to mix together. Season with salt & pepper. Cook for about 3 minutes, until onions start to soften and release juice.
3 – Seal the lid on the pressure cooker and cook for 20 minutes. When ready, release steam and remove the lid of the Instant Pot.
4 – Leave on the “heating” function and stir constantly until liquid has almost completely reduced and onions are dark brown. This takes about 7-8 minutes or so.
5 – Add stock, garlic bits, and thyme, raise heat on the Instant Pot and bring to a simmer. Then lower heat and simmer for about 10 minutes.
6 – Discard Thyme and add salt and pepper to taste.
7 – To Serve – Preheat your oven on broil. Butter the slices of toast and place in bottom of bowl. Add soup on top of toast and top with sliced Gruyere cheese. Broil until cheese is melted. Then serve!
