Cornbread is a staple here in the south, so I wanted to share a delicious Cracklin’ Cornbread recipe that is heavenly! This recipe has been loved by our family and I’m so excited to share with y’all! It’s a perfect combination of cornbread to cracklins that will make your mouth water!! Anything that my Nenaw makes is heavenly and most of the recipes I make have been passed down by her!
This recipe is made with a cast iron skillet. If you don’t own a cast iron skillet, I highly recommend one – you can find a good deal here and it’s already seasoned, so no pre-seasoning required. We LOVE to cook in ours! It’s very versatile, and if you like camping, it’s a great camping skillet!
Ingredients
1/4 cup – Butter
2 cups – Self-Rising Cornmeal
1/2 cup – All Purpose Flour
2-1/2 cups – Buttermilk (or Whole Milk)
2 eggs lightly beaten
Package of Pork Cracklins. I like the Lords brand.
Directions:
1 – Place butter in 10″ cast iron skillet and heat in oven on 425° until melted (about 3-4 minutes)
2 – Mix cornmeal and flour together in a large bowl. Mix until well blended.
3 – In a separate bowl mix together eggs, milk, and 1/2 of the cracklins.
4 – Add your wet ingredients to the large bowl of dry ingredients and mix well.
5 – Pour mixture over melted butter in skillet and add the rest of the cracklins to the top.
6 – Bake at 425° for 25-30 minutes or until golden brown. I like to check it with a fork in the middle to see if it comes out clean to make sure it’s done.
7 – if desired, broil for 2-3 minutes to get the top golden brown.
